Lemon Filling ?
for Lemon Meringue Pie?Mix together
1 cup sugar
1/3 cup flour
¼ teaspoon saltAdd slowly, stirring constantly
1 cup boiling water
Add
¼ cup lemon juice
Grated lemon rind from 1 lemon
Mix wellCook over low heat until thick
Remove from heat and melt in 1 tablespoon of butter
Cool and fill cooked pastry shell.
Cover with meringue and brown in oven @ 400 for 10 minutes
