Ice Box Cookies
Kathy: “I remember granny making these often, and I remember them being very good.
Granny usually kept some of the dough in the freezer.”Cream together:
1 cup shortening
2 cups brown sugarAdd to creamed mixtre:
2 eggs
5 teaspoons vanilla (yes, 5)
Mix wellSift together
4 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cream of tartar½ cup chopped nuts
Add dry ingredients to creamed mixture and mix well.
Add nuts with the last of the flour mixture
Mix wellRoll into 2” tube and roll up in a sheet of wax paper
Store in the refrigerator until firm
Cut in 1/8” slices or ½” slices and quarter each sliceBake @ 400F for 10 to 12 minutes
