Fruit Cake
3cups light brown sugar
3 cups butter
12 eggs, separated
beat yolks
beat egg whites until stiff
¼ cup brandy2 cups candied cherries
2 cups dried figs
2 cups dates
1 cups citron
2 cups pineapple
1 cup lemon peel
1 cup orange peel2 cups blanched almonds
3 cups raisins
2 cups currentssift together dry ingredients:
3 cups flour
2 tablespoons mace
2 tablespoons clove
2 tablespoons cinnamon
2 tablespoons allspice
2 tablespoons nutmeg
1 tablespoon baking sodacream butter & sugar, add beaten egg yolks and beat well
fold in egg whitesmix fruit & nuts and dredge with 1/3 mix of flour – fold into egg mixture
add remaining flour mixture and brandy, mix well
pour into one 10” tube pan and 1 10x5x3 loaf pan
bake in slow oven @ 275 for 3 ¾ hours for the tube pan
3 hours to 3 ¼ hours for the loaf pan
