Flour Tortillas

4 cups flour
6 ½ teaspoons baking powder
1 rounded teaspoon salt

4 ½ tablespoons shortening
1 – 1 ¼ cups warm water

In a large bowl, sift and mix together all dry ingredients

Cut in the shortening (should be the consistency of coarse meal)

Stir in water and knead for about 5 minutes
Set aside and let rest/rise for about 20 minutes
Roll into balls slightly larger than a quarter

Roll out each ball on a lightly floured board
Dust off flour and cook on a hot griddle
Turn when bubbles appear and cooked side is slightly browned I spots

Remove when other side is slightly browned in spots

Place between two plates or in a tortilla warmer

Continue with the rest of the dough
Wipe griddle clean as needed
