Cherry Topped Muffins

Cherry Mixture
Melt:
½ cup butter
Add:
½ cup sugar
cook over low heat, stirring constantly until thickened

Add 2 cups drained, pitted cherries and cook for a few minutes

Pour into the bottom of muffin tins

Muffins:
Sift together:
2 cups flour
1 tablespoon baking powder
2 teaspoons salt
¾ cup sugar

Cut in:
½ cup butter

Mix in:
1 beaten egg
1 cup milk

Stir milk mixture into dry ingredients. Mix lightly
Spoon into muffin tins over cherry mixture

Bake @ 400 for 20 minutes.

Serve muffins upside down
