Carrot Muffins

“Low Fat”

preheat oven to 400

sift together:
1 ½ cups flour
½ cups sugar
2 teaspoons baking powder
1 teaspoon soda
½ teaspoon salt
2 teaspoons cinnamon

mix in:
1 cup grated carrots
1 cup chopped nuts
1 cup raisins

beat liquid ingredients together:
¾ cup 2% milk
1 beaten egg
2 tablespoons vegetable oil

stir liquid mixture into dry mixture

fill muffin pans sprayed with pam

bake for 20 minutes
