Carrot Cake

Sift together and set aside:
2 cups sifted flour
1 tablespoon cinnamon
2 teaspoons baking soda
½ teaspoon salt

beat together:
4 eggs
2 cups sugar
add and blend well:
1 1/3 cups salad oil
Add dry ingredients in fourths and mix well after each addition.

Stir in 2 cups grated carrots and 1 cup chopped pecans

Bake @ 350 for about 40 mins
Let cool

Icing
11oz cream cheese (softened)
¼ cup butter (softened)
1 teaspoon vanilla
2 ½ cups confectioners (powdered) sugar
